Pressure Cooker Lazy Caramelized Braised Pork

Cut pork belly into chunks, put in a pot with cold water, and slowly boil to remove blood
Turn off heat when scum appears
Remove pork chunks
Prepare all seasonings
Heat oil in wok, add rock sugar, keep on low heat
It looks like this at first
Then it changes color
Turn off heat when bubbles appear. Otherwise it can easily burn and turn bitter
Add pork, be careful not to splash
After stir-frying, the color should be even. Add scallions, ginger, garlic and other seasonings, continue stir-frying until fragrant
Add a bowl of hot water and salt, then transfer to pressure cooker. Cook for 15 minutes from when steam starts rhythmically escaping. For elderly with dental issues, cook 20 minutes (at which point meat may fall apart easily)
Fifteen minutes is sufficient
Not greasy at all, falls apart with gentle pressure
