Green Rice Ball
Although the Qingming Festival has passed, I still want to share this delicious green rice ball recipe. If you can make it yourself, you can enjoy it anytime you want. Isn't that great? Thanks to my third aunt for introducing this recipe.

Mix 35g of wheat starch with 40g of hot water using chopsticks. Be sure to use boiling water; this is very important.
Add 100g of glutinous rice flour and 90g of wheatgrass juice.
Then add 10g of rendered lard and knead into a smooth dough.
Divide the bean paste into 20g portions. I used homemade bean paste.
Divide the dough into 30g portions. Wrap the bean paste inside the dough, like you would for making rice dumplings, and roll it into a ball.
Place the wrapped dough on a piece of parchment paper in a steamer, leaving some space between each ball.
Add water to the steamer pot and bring to a boil. Place the dough inside and steam for about 10 minutes. After steaming, brush them with a little oil to make them shiny and prevent sticking.
Wrap each one individually with plastic wrap and you're done.
