Cut the pork belly into chunks, soak in water for ten minutes, rinse clean. Drain and set aside.
Boil the quail eggs, peel them, and make a small cut on the eggs with a knife to help them absorb flavor.
Heat the pan on low heat, add the pork belly to render the fat. Then push the meat to one side, add rock sugar, and stir to caramelize.
Evenly coat the meat with caramelized sugar.
Pour in a can of beer, add ginger slices, tied green onion, light soy sauce, dark soy sauce, and star anise. Bring to a boil over high heat.
Add the quail eggs, cover, and simmer over low heat.
After twenty minutes, remove the lid and cook over high heat to reduce the sauce.
