Quick and Delicious Waffles (Non-Baking Powder Version)

These quick, delicious, and visually appealing treats are always particularly popular and especially catch kids' attention. Relatively speaking, I think the yeast version tastes better. This time the recipe doesn't use water or milk; I simply cracked two eggs into it. The baked waffles have a rich aroma.

Ingredients

High-gluten flour90 grams
Low-gluten flour70 grams
Yeast1.5 grams
Granulated sugar30 grams
Salt2 grams
Whole egg liquid96 grams (about 2 medium-sized eggs)
Butter30 grams

Steps

Weigh all ingredients except the butter and place them into a container.

Use chopsticks to slightly stir, then hand-knead into a rough dough. (It will be sticky; this is normal.)

Transfer to a working surface using a scraper, knead evenly, then add softened butter.

Knead the butter evenly into the dough and form it into a ball.

Let it rest at room temperature for about 30 minutes. If preparing for breakfast, you can seal the dough and refrigerate it overnight; take it out and divide it the next morning.

Divide the dough into evenly sized portions. (About 25 grams each, but the size can be adjusted according to preference.)

Preheat the waffle maker thoroughly. Place the dough into the maker, press slightly, and close the lid.

After about 2 minutes, if you smell the aroma, open the lid to check. Remove when the color matches the example image.

Cooking Tips

Tips: ① It's normal for the dough to be sticky; just knead it evenly, no need to make it smooth. ② If using a gas stove waffle mold, be sure to turn it over to prevent uneven cooking. ③ The sugar amount can be adjusted based on personal taste or the intended pairing, anywhere from 20-40 grams is fine.
