1. Pocket Bread 300g flour, 5g sugar, 3g yeast! 2g salt for extra elasticity! 180g warm water! Knead into a smooth dough! Let it rise until doubled in size! Knead the dough to release air, roll into a long strip! If using active yeast, no need to let it rise. For risen dough, add a bit of shortening, roll it out, and cook it on the stove! It's hollow, perfect for making meat-stuffed bread.
Prepare the shortening: 15g cooked oil, 15g flour, Five-Spice Powder, salt. Make it slightly dry for easier rolling without breaking.
Divide the dough into seven portions, roll them out like dumpling wrappers! After rolling, apply a little shortening; don’t apply too much to avoid leaks! Apply the shortening in the middle!
Wrap the dough portions like dumplings, shape them into balls! Dip the bottom in a layer of water followed by sesame seeds!
Roll into an oval shape, being careful not to tear the cuts made. Cover with plastic wrap and let rest for 15 minutes twice.
Spray a little oil into a heated pan, place the buns on it! Spray some oil on top to lock in moisture; otherwise, they’ll become dry. Cover and wait for bubbles to form before flipping!
Flip them over!
This little bread can be stuffed with anything!

2. Stir-fried Cilantro Beef Hunan Cuisine 1. First Method: Beef tenderloin or ribeye Slice and marinate with salt, light soy sauce, starch, white pepper, egg white, and a bit of oil. Marinate for 20 minutes. Heat scallion, ginger, and peppercorn to release fragrance, then add the marinated beef, starch, soy sauce, and oyster sauce. Stir-fry and finally add cilantro! 2. Or, for Hunan-style cilantro beef: Cut cilantro into sections. Slice beef, marinate with light soy sauce, oyster sauce, sugar, cooking wine, and starch. Add oil for a tenderer texture. Heat the pan with oil, sauté ginger, garlic, chili, and pickled peppers. Stir quickly till half-cooked, add salt and pepper, then cilantro, and stir quickly before serving! 3. Simple stir-fried beef: Heat oil, add green and red chili, onions, and garlic slices to the pan, followed by beef from the tenderloin. Fry till the beef changes color, add soy sauce, salt, sugar, beef powder, and cilantro! For tougher beef cuts, marinate with egg white, starch, and soy sauce first. 4. Another preparation by Chef Lu Xiao (see final image): Marinate beef slices with a pinch of baking soda, rubbing for 2-3 minutes to break down the fibers. Wash away the soda and blood with clean water, pat dry with kitchen paper. Mix with light soy sauce, dark soy sauce, oyster sauce, salt, MSG, and white pepper till it turns sticky. Add egg white, starch, and finally, seal with oil! Prepare scallion, ginger, garlic, pickled chili, and cilantro segments. Heat oil, sauté aromatics, add beef, spread and stir-fry until cooked. Be quick, as overcooking turns it tough. Add cilantro segments and sauté briefly. The entire process takes under 2 minutes! 5. Boiled beef variant: Marinate sliced beef with pepper, soy sauce, oyster sauce, and starch, avoiding salt. Cook the beef in boiling water until it changes color, then immediately remove and plate. Prepare a dipping sauce using minced scallion, garlic, sesame, red-pepper powder, oil, soy sauce, vinegar, sugar, and sesame oil. Mix boiled beef with cilantro roots and carrot shreds, add the above dipping sauce for delicious results.
3. Potatoes 1. Stir-fried Shredded Potatoes with Sauce: Sauté minced garlic and scallions, add pre-soaked potato shreds, and stir-fry on high heat. Season on low heat with light soy sauce and a bit of cooked soybean paste. 2. Stir-fried Potato Strips: Heat oil in a pan, add peppercorns, scallions, and star anise for aroma, then stir-fry potato strips. Add green chili, dark soy sauce, light soy sauce, water, salt, and mushroom seasoning or chicken powder. Before serving, add minced garlic and a splash of rice vinegar — it’s key to flavor.
4. Egg Soup: Add cucumber and tomato to the pot. Season with universal spice sauce, low heat for beaten eggs! White pepper, sesame oil, cilantro!
5. Stuffed Pocket Bread: Filled with braised pork, chili dices, cilantro, and meat broth. Optional fillings: lettuce, egg, shredded potatoes, or beef!

6. Pocket Bread with Shredded Potatoes and Pork: Soak shredded potatoes in cold water, blanch in hot water, and remove as soon as it boils. Slice pork and marinate with soy sauce, oyster sauce, Orleans marinade, salt, and starch, mix well! Heat oil, fry the marinated pork till cooked, then add shredded potatoes, cumin powder, BBQ seasoning, sesame salt. Lightly fry and stir.
7. Potato & Tofu Soup: Heat oil and sauté scallions and pepper powder, add pork belly and tofu (after blanching), stir-fry briefly, then season with soy sauce, water, potatoes, and star anise. Add salt, beef powder. Garnish with scallions before serving. Mushroom Meat Sauce with Steamed Bread Chili and Ham Stir-fried Eggs 8. Cilantro Egg Stir-fry: Fry unbroken eggs until golden brown on both sides, break them into pieces. Add cilantro, minced garlic, and pour in a sauce (soy sauce, oyster sauce, MSG, dried chili, sugar, starch, water), stir-fry briefly before serving!
