Cut the pork belly into pieces, put it in cold water, add cooking wine, bring to a boil to remove the smell.
No need to add oil to the pan. Use low heat to fry the pork belly pieces until the extra oil comes out.
Fry until slightly golden like this, then remove.
Add oil to the pan, use low heat (no need to wait until the oil is hot), add rock sugar, and slowly stir-fry until it turns jujube red. Then you can add the meat.
Stir-fry until the sugar color appears, add the pork belly pieces, an appropriate amount of dark soy sauce, oyster sauce, and two cinnamon sticks. Add water until it covers the pork belly. Bring to a boil over high heat, then simmer on low heat for about 20 minutes. Add an appropriate amount of salt, simmer for another 5 minutes, and then use high heat to reduce the sauce.
