Braised Pork with String Beans and Tofu
A rich and savory dish that pairs perfectly with rice. The string beans and tofu taste even better than the braised pork!

Clean the pork belly, place it in cold water with ginger slices and 5-6 peppercorns. Blanch, then clean and set aside. Clean the string beans and cut them into sections.
Heat the pan with oil, add chopped scallion, ginger slices, and rock sugar. When the sugar melts, add the pork belly and stir-fry until caramelized, then set aside.
Using the leftover oil in the pan, sauté the string beans until they turn bright green, then set aside.
Add an appropriate amount of light soy sauce, dark soy sauce, and cooking wine to the pan, then add a bay leaf and stir-fry the pork belly until evenly coated.
Add hot water to the pot until the ingredients are submerged.
Simmer on low heat for 30 minutes, then add the five-spice tofu (pre-blanch the tofu in boiling water to remove any tofu odor).
Finally, add the sautéed string beans.
Simmer on low heat for 10 minutes, then reduce the sauce over high heat. Serve!
