Braised Pork with Tofu Skin and Fried Tofu
My eldest child's favorite braised pork. Plain braised pork feels too greasy, but adding some tofu skin absorbs the oil and makes it delicious—killing two birds with one stone. This dish takes a long time to prepare, but the result is tender, fragrant, and melt-in-your-mouth delicious! Every time I make this dish, my little girl can finish a big bowl of rice. Now that my second child has grown up, they can also enjoy a few pieces of meat.

Cut into 2-3 cm cubes
Prepare scallion, ginger, garlic, chili, star anise, bay leaves, and chili
Soak the tofu skin until soft, then cut into sections
Boil the meat in cold water to remove blood and impurities, then rinse and drain
Heat oil and sugar in a pan to make caramel
Add the meat and stir-fry to coat with color
Add scallion, ginger, star anise, bay leaves, and 1 tablespoon of dark soy sauce, stir-fry evenly
Pour in boiling water to cover the meat
After boiling, add the fried tofu
Transfer to a clay pot, cover, and simmer on low heat for 1.5 hours, then add salt
Add tofu skin, simmer for another half hour to absorb flavors, reduce the sauce, and add light soy sauce
Serve and enjoy! It's fragrant, tender, and not greasy at all! There's a subtle bean aroma; the tofu skin absorbs the oil and flavors perfectly! My eldest child's favorite!
