Prepare the ingredients
Clean the pork belly, cut into chunks, blanch in cold water with cooking wine and ginger slices
After boiling for about two minutes, clean and drain the pork
Add a small amount of oil to the pan (since the pork belly will release oil when stir-fried), heat the oil, then add scallion segments
Once the scallion aroma is released, add the pork and stir-fry
Prepare the sauce (2 tbsp light soy sauce and 1 tbsp dark soy sauce)
Add 2 tbsp cooking wine, fermented tofu sauce (mash the fermented tofu and its liquid), and the prepared sauce in sequence
Stir-fry evenly
Pour about 600ml of boiling water into the pan, add rock sugar
Add a small half-spoon of salt, bring to a boil over high heat, then simmer on low heat for about half an hour. Reduce the sauce over high heat
Plate the dish, sprinkle with chopped scallions, and enjoy!
