Roasted Duck Leg
In recent years, roasted duck legs sold at street-side stalls. You can see smoke from grilling charcoal from afar. The stall always comes with a long line of customers. My friend loves it. Not long ago, they dragged me to buy some. Said once I tasted it, I would know how to make it. (And then make it for them.?) The stall owner talks way too much. Grilling and talking non-stop. You’d see their spit flying all over. I seriously wanted to take my mask off and put it on him. When it was our turn, I couldn’t help joking: Boss, stop talking. No need for extra “seasoning” on ours....!!( ´▽`) I tried making it myself afterward. It’s really simple. Using an oven is relatively healthier. The key is cleanliness, hygiene, and peace of mind. Most importantly, I bought four raw duck legs for only 9.2 yuan. The cooked ones sell for 8 yuan each...!)^o^(

Clean the duck legs. Make a few cuts on the surface. Put into a pot of cold water. The duck legs we have here are usually frozen and quite cheap..! ( ̄∇ ̄). If you have fresh ones available, buy fresh ones. (What else?) (−_−#)
Bring water in the pot to boil. Continue boiling for 5 minutes, then remove and wash. If there are small hairs on the skin, it’s easy to remove them now. If you don’t mind, you don’t have to remove them. After all, it’ll be in your belly before you know it...!
Fill the pot with water. Add the spice pack, light soy sauce, dark soy sauce, rock sugar, and dried chili. You can buy spice packs at the supermarket for 2-3 yuan per pack! Smaller ingredients can go into a sachet, larger ones can go directly into the pot....! Or just use what you have at home. Add regular spices as you like.
Once it boils, simmer on low heat for 15 minutes...
Add the duck legs to the pot, then pour in the white liquor...
Simmer on low until the duck meat is almost tender, then add salt. Turn off heat 10 minutes later. Let soak for over 3 hours, preferably refrigerated overnight. If you like them chewy, no need to fully soften them. Not my teeth, anyway..
Put all spicy oil ingredients into a pot. Simmer on low heat... If you don’t like spicy, you can skip the chili. If you’re lazy and don’t want to make it, buy ready-made chili oil instead. Or use plain cooking oil. Make extra and save for other dishes..!
Once the scallion whites and onion turn golden, remove them. Store the oil and let cool..! Better to remove early than late. Burnt oil turns bitter..!
Place the duck legs on a grill rack. Use a tray lined with foil underneath. Seriously..! Or you’ll regret it afterward... Set the oven to 200°C. Preheat or not, up to you...!
Grill each side for two minutes. Brush a layer of spicy oil, grate each side again for two minutes..!
Mix cumin powder, chili powder, pepper-salt powder, and sesame seeds together. For the underside, open up the middle bone a bit. Sprinkle the seasoning layers into the meat. This makes it more flavorful..! Grill for about 3 minutes. Exact time depends on the situation.
Flip, sprinkle more seasoning, then grill another 3 minutes.
After grilling, sprinkle some chopped scallions on top..! Of course, skipping it is fine too..
