Scones have always been one of my favorite little pastries. They are extremely quick to make, taking just half an hour to come out of the oven warm and fresh. The flavor is also outstanding—as long as you follow the recipe step by step, the texture is perfectly crumbly and delicious. Pair it with a cup of tea, and it becomes an indispensable part of afternoon tea. Pair it with a glass of milk, and it makes for a nutritious breakfast. This is also why I love scones. And today’s scones are savory ones (many of you have been asking for savory pastries, and this one won’t disappoint). Savory and delicious pastries are indeed rare, and this is one of them. The combination of cheese and scallions gives it a uniquely rich aroma, and the perfect level of moisture makes it crispy on the outside and soft on the inside—you could eat several pieces straight out of the oven. Ingredients

Cake Flour100 grams
Cream Cheese60 grams
Butter30 grams
Milk (or Water)15 grams
Baking Powder3 grams
Granulated Sugar5 grams
Salt2.5 grams
Scallions (Chopped)35 grams
Egg (Whole Egg Liquid)15 grams
For Topping:to taste
Whole Egg LiquidAs needed

First, soften the cream cheese and butter (if the room temperature is low, you can soften them by heating over water or using a microwave. If using a microwave, cover the cream cheese to prevent splattering). Use an electric mixer to whip the softened butter and cream cheese until smooth and fully combined.

Add milk, granulated sugar, salt, and egg. Then mix evenly with an electric mixer until a thick batter forms, as shown in the picture. ☆ Although it’s a savory pastry, adding a small amount of sugar enhances the flavor. If you prefer no sugar at all, you can omit it.

Add the chopped scallions and mix evenly.

Mix the cake flour and baking powder, then sift them into the cheese batter.

Using a spatula, mix just until the flour and cheese batter are combined. Do not overmix. At this stage, you’ll get a very moist dough.

Dust your work surface with some flour to prevent sticking. Place the dough on the surface and flatten into a round shape about 2 cm thick using your palm. ☆ The dough is quite sticky and soft, so you can dust more flour on your hands to prevent sticking.

Cut the dough into 8 pieces using a knife.

Finally, place the small pieces evenly on a baking tray lined with parchment paper. Brush a layer of whole egg liquid on the surface and bake in a preheated oven at 200°C (upper and lower heat) for about 15 minutes. Bake until the surface is golden brown, then remove. Since ovens may vary, adjust the temperature and time as needed.
