Secret Recipe Braised Pork - Wok Version

I've always used a cast iron pot to make braised pork, but considering not everyone has one, I created a wok version of braised pork.

Ingredients

Pork belly1000g
GingerA large piece
Star anise1 piece
Sichuan peppercorns10-20 pieces
Nutmeg1 piece
CinnamonA small piece
Shaoxing wine100ml
Light soy sauce50-60ml
Dark soy sauce20ml
Fermented tofu1 piece
Scallion2 segments
Rock sugar60-80g

Select high-quality pork belly

Cut into square pieces

Place the meat directly into the wok. No oil! No oil! No oil! Heat over medium flame until the surface turns slightly golden brown

Add ginger, Sichuan peppercorns, star anise, and nutmeg, then stir-fry until fragrant

Add Shaoxing wine, light soy sauce, dark soy sauce, fermented tofu, and rock sugar in sequence. Mix well after each addition before adding the next ingredient

Finally, add fermented tofu and rock sugar to enhance the color of the braised pork

After all seasonings are added, include two large segments of scallion

Add boiling water until it covers the meat

Simmer over low heat with the lid on for 40 minutes to an hour. Then remove the large spices

Uncover and reduce the sauce over high heat. Be careful not to leave as it can easily burn. Once the sauce thickens, it's ready to serve.
