Sesame Sauce Spinach
This sesame sauce spinach dish is not only simple to prepare but also delicious.

Trim the roots and yellow leaves of spinach. Wash and set aside (no need to dry).
Pour cool boiled or purified water into a basin, add ice cubes, and set aside.
Bring water to a boil in a pot, add spinach and blanch for 30 seconds.
Immediately transfer blanched spinach to the basin with ice water.
Take out the cooled spinach, squeeze out excess water, chop into sections, and place in a container.
Mix sesame sauce, peanut butter, and soy sauce. Add a small amount of boiled water and stir in one direction until smooth. Ensure each addition of water is fully absorbed before adding more.
Season the diluted sesame sauce with sugar and salt, then add a touch of chili oil.
Pour the prepared sesame sauce mixture over the spinach.
For dressing, keep the sesame sauce slightly runnier for better texture. Sprinkle with roasted sesame seeds.
Chop roasted peanuts and garnish the salad with them.
