Shrimp Tomato Pasta
1. Shrimp oil is the essence, it’s not recommended to skip it. Give it a try and you'll see! 2. I usually cook the pasta while preparing the sauce (don’t overcook the pasta; I typically cook it for 7–8 minutes, but it depends on the thickness—taste it before removing). Alternatively, you can cook the pasta first and then make the sauce. Choose juicy tomatoes for better taste; if the tomatoes are less juicy, use an additional one—it’s all up to your preference. 3. Broccoli (or asparagus) can be omitted. I didn’t prepare a separate vegetable salad, so I included some for nutrition and health. A reminder: juicy tomatoes work best! 4. This dish can also be made with beef—just chop the beef finely. 5. This recipe serves two. My husband has a big appetite, so for women, 60g–80g might be enough. Wash the broccoli and blanch it, then drain. Cut the cherry tomatoes in half, peel and dice the tomatoes, chop the onion and garlic, and keep the shrimp heads dry with kitchen paper. Peel the shrimp, cut along the back to remove the vein, season with white pepper and cooking wine, and set aside.
Cook the pasta (while simultaneously preparing the shrimp oil and sauce in another pot): Bring a pot of water to a boil, add some salt, and cook the pasta, stirring occasionally to prevent sticking. Cook for about 7–8 minutes, then drain and mix with a bit of olive oil to prevent sticking. If the sauce is ready, drain the pasta and mix it directly into the sauce without adding extra olive oil.
Make shrimp oil (use extra oil as the shrimp heads absorb some): Heat olive oil and butter in a nonstick pan. Once the butter melts, add the shrimp heads and fry until golden on both sides, pressing them with a spatula. Remove the shrimp heads, then add the shrimp and cook until ready. Set aside.
Add minced garlic and diced onion to the pan and sauté until fragrant. Add the diced tomatoes and cherry tomatoes, stir, and season with salt, sugar, tomato sauce, dried basil, and black pepper. Stir over medium-low heat for about two minutes until the sauce thickens. Turn to low heat, add the shrimp and broccoli, toss together, then mix in the pasta and turn off the heat. Season with more black pepper and cheese powder, mix evenly, and serve.
