Salmon Garden Soy Milk Stew with Mixed Vegetables [Healthy One-Pot Meal]

Make your own soy milk in advance, and set aside 250ml. The ratio is 50g of soybeans to 1000ml of water.
Wash and cut the carrot, green peas, corn, button mushrooms, and broccoli, then set them aside.
Rub both sides of a salmon piece with sea salt and freshly ground black pepper, then pan-fry it in olive oil until both sides are golden brown. Set aside.
Heat a pan with a small amount of olive oil and stir-fry the onions until fragrant. Add the carrot, green peas, corn, and button mushrooms, stir-frying briefly. Pour in the soy milk and sprinkle a handful of bonito flakes. Bring the soy milk to a boil, then cover and simmer on medium-low heat for 5 minutes.
Finally, add the broccoli, salt, and freshly ground black pepper, and stir-fry for 1 minute. Add the cheese, and once it melts, serve all the stewed vegetables.
The cheese used is a small Brie. You can also use cheese slices.
Place the pan-fried salmon on top. When eating, dip the salmon in the broth for the best experience!
