Cut the pork belly into chunks.
Soak a handful of gourd strips in advance. You can also use wide noodles, dried green beans, or potatoes, or skip adding any side dishes.
Add water to the pot, bring the pork belly to a boil, and skim off the foam.
Continue boiling for 5 minutes.
Remove and drain the water for later use.
Add a small amount of oil and a little rock sugar to the pot. If you don't like sweet dishes, use as little rock sugar as possible. Stir-fry to get some caramel color.
Melt the sugar.
Immediately add the pork belly and stir-fry to coat it with color.
Pour in half a can of Coca-Cola Zero Sugar. If you like a sweeter flavor, use a whole can.
Add green onion slices, ginger, star anise, bay leaves, cooking wine, dark soy sauce, light soy sauce, oyster sauce, and an appropriate amount of salt. Add enough water to cover, bring to a boil over high heat, then simmer over low heat for 25 minutes.
Add the gourd strips and bring to a boil. If the liquid is insufficient, add some hot water and continue to simmer over low heat for 25 minutes.
Turn the heat up and stir-fry until the sauce thickens.
Dish out and serve, garnished with some scallions.
