🔥Simple and Quick Guide | Rustic Sushi—No Sushi Rice, No Sushi Vinegar, No Bamboo Mat
The kindergarten is having a food sharing event. They informed me at 4 PM, and I have to bring something the next morning. What to do? Make something quick! No sushi rice? Use regular rice and glutinous rice. No bamboo mat? Use a silicone mat. No sushi vinegar? Use seasoning! Hahaha—essentially it's just rice rolled with anything. If it's not for kids, I used to roll fried dough sticks, pickles—everything tastes good.

Mix starch with a small amount of water until smooth. Add a pinch of salt and the 3 eggs. Mix well and pour into a non-stick pan to make an egg sheet.
Shoutout to my Joyoung non-stick pan—it makes me happy every time I cook and even when I tidy up my kitchen. Hahaha.
Prepare the seasonings: vinegar, salt, walnut oil, soy sauce, sugar, oyster sauce—mix everything evenly and set aside.
Flip the egg sheet to cook the other side.
Cut cucumber, sausages, and egg sheet into strips—get them ready.
Lay down a silicone mat, place the rough side of a seaweed sheet up with its longer side toward you. Take another seaweed sheet and place a third of it diagonally on top. Add rice as a barrier—this tip is inspired by Aunt Tang and works great.
After the rice is cooked, let it steam for a few minutes while still hot. Pour in the mixed seasonings and use a rice spatula to evenly mix. Prepare a bowl of cold boiled water. Spread the rice evenly (use the cold water to prevent sticking), keeping it thin.
Add all the pre-cut ingredients on top.
Lift the silicone mat and roll it up gently—refer to cake roll techniques here.
Tighten it—keep pressing—roll and press until the roll is complete. Then squeeze the entire roll firmly to make it easier to cut without falling apart.
With one cup of rice, I made five rolls—not too big—perfect for kids.
Cut the rolls evenly and neatly. While cutting, dip the knife in cold water from a bowl to prevent sticking.
Take a final look—off to school it goes.
