Rinse the “homemade” Chinese sausage in warm water.
Slice it on the bias.
Wash the green beans, snap off the ends, and pull off any tough strings.
Cut the beans on the bias.
Prepare the dried chilies, Sichuan peppercorns, and minced garlic.
Bring water to a boil in a wok or pot and add a pinch of salt.
Add the green beans.
Blanch until cooked through, then remove and drain well.
Heat oil in a wok, add the dried chilies, Sichuan peppercorns, and minced garlic, and stir-fry over low heat.
Add the Chinese sausage and continue stir-frying over low heat until it releases its fat.
Cook until the sausage curls slightly and the garlic turns golden.
Add the green beans and stir-fry so they can absorb some of the flavored oil from the sausage.
Stir-fry evenly, then season with salt, light soy sauce, and chicken bouillon powder.
Right before taking it out of the wok, add a little sugar, then plate.
Serve it hot and fragrant at the table!
