Braised Pork with Dried Bamboo Shoots
This dish is also the whole family's favorite. Southern dried bamboo shoots combined with northern-style braised pork. Crispy and delicious 😍, leaving a lasting impression~

First, soak the dried bamboo shoots in cold water for 6 hours, or use warm water as an alternative.
Cut the pork belly into evenly sized small pieces.
Cut the soaked bamboo shoots into small pieces as well. Personally, I like them in small chunks—it’s easier to eat this way. 😄
Prepare scallions, ginger, garlic, rock sugar, star anise, cinnamon stick, and bay leaves in advance. Add a bit of chili if you like.
Heat oil in a pan, add star anise, cinnamon stick, and ginger slices, and stir-fry until fragrant. Add the pork belly and stir-fry until golden brown.
Add scallion segments and cooking wine, pouring it along the edge of the pan for a rich aroma. Then add dark soy sauce and stir well.
Add the chopped bamboo shoots and stir-fry with the braised pork for five minutes to enhance the flavor. Add enough boiling water to cover the meat and bamboo shoots. Simmer on medium heat for 30 minutes, then turn to low heat and simmer for another 30 minutes.
Personally, I like simmering for over an hour for a richer flavor. Add salt to taste, depending on your preference. 😄 It’s ready to serve now! (๑• . •๑)
