Cut green and red chili peppers into small pieces, chop green onion, ginger, and garlic finely.
Soak the dried anchovies in water until softened, then wash and drain.
Heat the pan with cold oil, add chopped green onion, ginger, and garlic, and stir-fry until fragrant.
Add dried anchovies, a little cooking wine, and white pepper to remove the fishy smell. Stir-fry for about 5 minutes. You can add some water according to your taste to prevent the dish from drying out. Add 1-2 tablespoons of chopped chili sauce, stir-fry until the anchovies slightly soften. Add the green and red chili segments, a little soy sauce for flavor. Stir-fry until the green and red chilies change color, then remove from the heat.
This dish goes perfectly with steamed rice, porridge, or buns.
