Clean the squid rings.

Blanch them briefly in boiling water, then remove and soak in cold water. Drain and set aside.

Shred the ginger, chop the garlic, cut the scallions diagonally, and slice the chili diagonally.

Prepare the Doubanjiang.

Heat oil in a pan. Add the shredded ginger and chopped garlic, stir-fry until fragrant. Add Doubanjiang and stir-fry until it releases red oil. Add the squid rings and all seasonings, and stir until flavored thoroughly.

Add scallion and chili, stir well, and serve. Snap a photo while it's steaming hot and enjoy your meal!

Cooking Tips
All seafood has a natural fishy smell and the characteristic of releasing water when heated, so blanching is essential. This step not only helps remove the smell but also drains excess water from the seafood. Stir-frying after blanching results in a dry and attractive appearance. However, after blanching, immediately soak in cold water to cool down. This applies to fresh squids, squid rings, and rehydrated squid alike.
