Spicy Tofu/Mapo Tofu Made with Hot Pot Base
Ingredients
Tofu1 block
Cornstarch2 tablespoons
Saltto taste
Ground Sichuan pepperto taste
Haidilao hot pot base3 tablespoons
Chopped scallions and chili ringsas needed

Prepare ingredients: Wash and cut tofu into small cubes, blanch them. Also prepare minced pork, chopped scallions, minced garlic, and chili rings.

Heat oil in a pan and stir-fry the minced pork until separated.

Add minced garlic.

Add hot pot base and ground Sichuan pepper, stir-fry until fragrant.

Add an appropriate amount of boiling water.

Add tofu and simmer.

Add salt to taste, adjust seasoning, and continue simmering.

When there's about 1/3 of the broth left, add cornstarch slurry.

Reduce the sauce over low heat until it thickens and coats the tofu.

Once the sauce has thickened, plate the dish.

Done! Serve hot with rice. The tofu won't taste as good when it's cold.
