Cooking Tips

For this pumpkin mooncake, you can't use glutinous rice flour alone, as the steamed result will be too sticky and prone to collapse, making it difficult to shape. Adding low-gluten flour solves this issue without affecting the texture. There's no need to add sugar as the natural sweetness of pumpkin is enough, and the red bean paste is sweet as well. However, if you have a sweet tooth, you can add a little sugar according to your preference. Before molding the mooncakes, dust them with a layer of flour to help with demolding. After making the pumpkin mooncakes, wrap each one in cling film while still warm. They will remain soft at room temperature the next day. If refrigerated, steam them again before eating to restore their texture.
