Steps

Cut the cured meat into large pieces, add water, yellow wine, green onion, and ginger into a steamer, and steam for half an hour.

Cut the asparagus into sections, blanch in boiling water, then cool it in cold water and set aside.

Cooking Tips

Before stir-frying cured meat, pre-steam it to remove some of the salty and fishy taste, and to make the meat tender for better texture. Since cured meat is inherently salty, the amount of salt in the ingredients can be adjusted accordingly. When blanching asparagus, adding a small spoon of salt to the water will enhance its color.
