First, clean the strawberries and remove the stems. Pat them dry with kitchen paper and skewer them on small wooden sticks for later use.
Add the white sugar into the pot first, then pour in the water. Set the induction cooker to level 2. Let the mixture boil without stirring. Watch for the color to change. Once the syrup turns light yellow, turn off the heat.
After the syrup is ready, quickly roll the strawberries in it. Be fast, or the syrup will form a thick coat. During colder weather, the syrup solidifies quickly, so rotate the coated strawberries in the air a few times before placing them on a grid to fully solidify. This method ensures good-looking candied hawthorns.
