Frosted Cashews

Someone said: This is one of the most anticipated dishes at wedding banquets. Yes… In the past, you would always find this dish at wedding banquets. Nowadays, they only serve sunflower seeds at such events. If you want to eat this, you have to make it yourself.

Ingredients

Cashews600g
Sugar160g
Water75g

Wash the cashews, preheat the oven to 130°C for 15 minutes. Spread the cashews evenly (preferably not overlapping) and bake at 130°C for 45 minutes.

Add water and sugar into a pot and cook over medium-low heat until it boils.

At first, the sugar water will form small bubbles. Wait until you see larger bubbles appear.

Pour the baked cashews into the sugar water and stir-fry continuously (imagine the peanuts in the picture are cashews).

Stir-fry until all the water has evaporated and turn off the heat. Continue stirring quickly until the sugar forms a frosted layer.

Remove from the pot, spread evenly, and let cool. Store in a sealed ziplock bag.

Cooking Tips

**This is actually the [reverse sand] technique. Once the cashews are baked, do not leave them out of the oven. Keep the cashews warm so the sugar does not solidify immediately upon contact. This ensures the sugar can coat the cashews evenly.
