Prepare minced garlic, chopped scallions, and chili rings as needed.
Mix the sauce in proportions (see picture: steamed fish soy sauce: water: sugar = 4:2:1). Adjust according to personal taste.
Clean the river shrimp. Pour water into the pot, add 1 spoon of cooking wine, 1 teaspoon of salt, scallion sections, and ginger slices. Bring to a boil over high heat.
Once the water is boiling, blanch the river shrimp in the water.
Cook for 1.5-2 minutes and then remove. Overcooking will make the meat tough.
Remove the river shrimp, drain, and plate.
Spread the prepared minced garlic, chopped scallions, and chili rings over the shrimp. Heat 3 spoons of oil in the pot on high and pour over the plate to release the aroma.
Turn off the heat and use the residual heat of the pot to warm the prepared sauce. Pour it over the shrimp.
