The rice from Guicai family has an excellent texture. The cooked rice is soft, glutinous, and chewy, making it perfect for making sushi. ๐

Prepare the ingredients: Guicai Family Wuchang Farm Daohuaxiang Rice. If you don't have Guicai Family's rice, other types of rice can be used as well, but the texture won't be as good.
Rinse the Guicai Family Wuchang Farm Daohuaxiang Rice twice, use slightly less water than usual for cooking, and soak the rice for 15 minutes before cooking.
While the rice is cooking, prepare other ingredients: 1. Steam the crab sticks in cold water for 10 minutes. Cool them down and cut them in half. 2. Wash and cut the carrot into strips. Boil water, add a teaspoon of salt, and blanch the carrot for 2 minutes. 3. Wash and cut the cucumber into strips. 4. Cut the hotdogs into strips. Try to cut all ingredients into long strips!!!!!!
Whisk 2 eggs with 0.5g salt and a few drops of cooking wine. Heat a non-stick pan with a bit of oil, pour in the egg mixture, let it set, flip it, and then cut the cooked egg sheet into long strips.
Once the ingredients are ready, prepare 2 pickled gherkins and 50g of pork floss.
After the rice is done, let it steam for another 10 minutes. Then, take out 400g of rice, mix in the roasted sesame seeds and sushi vinegar, stir evenly, and let it cool for later use.
Regular Roll: Lay a sheet of plastic wrap on the sushi mat, place a sheet of sushi nori on it, spread the rice on top, and spread mayonnaise over the rice.
Place the ingredients on the rice and apply more mayonnaise to the ingredients.
Using the sushi mat, roll the rice into a cylindrical shape. Make sure to roll it tightly, otherwise, it will fall apart when cutting. Be careful not to roll the plastic wrap into the sushi.
After rolling, wrap it in plastic wrap. Next, let's make reverse sushi.
Reverse Sushi: Lay a sheet of plastic wrap on the sushi mat, place a sheet of sushi nori, spread rice over it, and make sure to press the rice firmly down!!!!! Then flip it over.
Spread mayonnaise on the sushi nori, place other ingredients on top, and use the sushi mat to roll the rice tightly. Be sure to roll tightly to prevent the sushi from falling apart when cutting.
Spread mayonnaise on the surface, coat it with pork floss, and use a sharp knife to cut into pieces for serving. Wipe the knife clean with a damp cloth after each cut for easier slicing and neat edges.
