Sweet and Sour Sole Fillet

Defrost and clean the sole fillet, pat it dry with kitchen paper, cut into pieces, and marinate with a pinch of salt, pepper, and egg whites for 15 minutes.
Add some cornstarch and mix well.
Heat a pan, add an appropriate amount of oil, wait for the oil to get hot, then fry the fish pieces until golden.
Take them out, heat the oil again, refry the fish pieces for a crisp texture, then remove them to drain excess oil.
Leave a small amount of oil in the pan, add sweet chili sauce, ketchup, a small amount of water, and a few drops of vinegar to simmer until thickened.
Add the fried sole pieces, stir quickly, and serve immediately.
