Sweet and Sour Pineapple Ribs
The ribs are crispy and tender, the pineapple is fragrant, and the dish is sweet and sour.

Bring water to a boil, add one tablespoon of cooking wine, blanch the ribs until they change color, then rinse with cold water and drain for later use.
Cut the pineapple into pieces, soak in light saltwater for 20 minutes, then drain for later use.
Slice the green and red bell peppers.
Prepare scallions, ginger, garlic, star anise, cinnamon, and rock sugar.
Mix two tablespoons of ketchup, one tablespoon of light soy sauce, a pinch of salt, and two tablespoons of water to make a sauce and set aside.
Heat a pan with oil, add scallions, ginger, garlic, star anise, and cinnamon, and stir-fry briefly.
Add the ribs and stir-fry for one minute.
Add one tablespoon of cooking wine and one tablespoon of light soy sauce, and continue stir-frying for another minute.
Pour in boiling water to cover the ribs, add rock sugar, and simmer over medium-low heat for about 1 hour.
When the sauce thickens, remove scallions, ginger, garlic, star anise, and cinnamon with chopsticks.
Pour in the ketchup sauce prepared earlier.
Cook until the sauce thickens again.
Add the pineapple and bell peppers.
Stir well and serve.
