Sweet and Sour Onion Stir-fried Eggs

I love all kinds of sweet and sour dishes, and this is one of the dishes we often cook at home. Every time I make it, it’s so good that I almost lick the plate clean. I particularly enjoy mixing the sauce and dish with rice, which means I end up eating two bowls of rice. So much for dieting...

Ingredients

Eggs4 pieces
Onions1 piece
Vinegar5 tablespoons
White sugar2 tablespoons
Light soy sauce4 tablespoons
Dark soy sauce1 tablespoon
Cooking oilappropriate amount
White sesame seedsappropriate amount
Sweet potato starcha little
Waterappropriate amount
Green onions1 stalk
Salta little
Cooking wine1 tablespoon
Milk15 milliliters

Prepare the ingredients: onions, eggs, green onions (mix sweet potato starch with an appropriate amount of cold water to make starch liquid and set aside, sorry it's not shown in the image).

Crack the eggs into a bowl, add cooking wine, a pinch of salt, and milk.

Slice the onions and whisk the eggs evenly.

Heat oil in a wok, then pour in the egg mixture.

Stir-fry the eggs and set aside.

Heat a little more oil, stir-fry the onion slices until fragrant.

Add back the scrambled eggs and stir-fry a few times.

Add light soy sauce, dark soy sauce, sugar, vinegar, and a little water. Stir-fry evenly. Adjust the seasoning to your liking.

After adjusting the seasoning, add the pre-mixed sweet potato starch liquid. Stir-fry until the sauce thickens, then remove from heat.
