Stir-fried Pork with Tofu Sheets

Wash the tofu sheets briefly and cut them into thin strips. Wash and peel the carrot, then shred it. Wash and chop the spring onions into segments for later use.
Cut the pork into thin strips along the grain, slice the ginger, and place both in a large bowl. Add light soy sauce, dark soy sauce, a pinch of granulated sugar, and cornstarch, then mix well. Drizzle in a small spoon of sesame oil, mix thoroughly, and marinate for about 10 minutes.
Boil water in a pot until it simmers, then turn off the heat. Stir in 1 teaspoon of salt, add the tofu strips, and blanch for 1–2 minutes to loosen them. Remove and drain for later use.
Heat the pan and add oil. Stir-fry the pork strips until they change color, then remove and set aside.
Using the remaining oil in the pan, stir-fry the shredded carrot briefly. Add the blanched tofu strips and stir-fry together. Season the pan with light soy sauce, dark soy sauce, and a suitable amount of salt, stir well, and add 2–3 spoons of broth. Simmer for 1–2 minutes to let the tofu absorb the flavors.
Return the pork strips to the pan and stir-fry with the tofu strips. Drizzle a small spoon of soy sauce over the mixture, stir evenly, and sprinkle the chopped spring onions into the pan before serving. Stir quickly and remove from the pan to serve.
