Steps

Take out the ingredients and wash them, then put them in a bowl and add water to cover the ingredients, soaking for around 30 minutes (except for osmanthus).

Pour the soaked water and ingredients into the pot (non-woven fabric can be used or not) and add some additional water; generally, one package requires about 3000ml of water (around five bottles of mineral water).

Boil on high heat, then simmer on low heat for around half an hour. Turn off the heat and add rock sugar—generally, about 150g Xie Ji yellow rock sugar per package.

Cooking Tips

Sour plum soup should not be cooked in iron or aluminum pots. Pressure cookers are aluminum pots and thus are not suitable. Ladies can use stainless steel pots. Once the sour plum soup is cooked, let it cool and refrigerate for a while for superior taste. Experienced individuals can purchase the ingredients independently—markets and pharmacies should have them available. For those unfamiliar with the ingredients, no need to worry.
