Vegetarian Kung Pao Chicken

A Kung Pao chicken dish without chicken, made with king oyster mushrooms, hence called vegetarian Kung Pao chicken. It is very tender, smooth, nutritious, and delicious.

Ingredients

King oyster mushroom400g
Peanuts60g
Small red chili1
Small green chili1
Scallion10g
Ginger5g
Cooking wine10g
Salt3g
Soy sauce10g
Vinegar10g
Dried chili1
Dark soy sauce2g
Garlic4 cloves
Small scallion10g

Steps

First, wash and dice the king oyster mushrooms, blanch them in water, add a teaspoon of cooking wine and a little salt, mix well by hand, then add dry starch and mix well. Marinate for 10 minutes. As shown in the picture above.

Fry the peanuts until cooked, remove the red skin, and cut the chili into sections for later use. As shown in the picture above.

Prepare a sauce: put in an appropriate amount of small scallion sections, minced garlic, 2 teaspoons of vinegar, 1 teaspoon of dark soy sauce, 2 teaspoons of sugar, 1/4 teaspoon of salt, 1 teaspoon of cooking wine, 1 teaspoon of dry starch, and 4 teaspoons of water. Mix them together to make the sauce for later use.

Heat oil in a pan, stir-fry the diced king oyster mushrooms, then set aside. As shown in the picture above.

Heat oil in a pan, add dried chili sections and Sichuan peppercorns, stir-fry over low heat until fragrant. Then add scallion, ginger, and garlic and stir-fry. Add the prepared diced king oyster mushrooms and stir-fry. Turn to high heat, pour the prepared sauce along the edge of the pan, stir-fry evenly, then serve. Cooking Tips

1. Sprinkle the peanuts after the dish is served to keep them crispy. 2. Blanching the diced king oyster mushrooms removes the purines in the mushrooms.
