Walnut Bread - A Healthy Bread That Gets More Flavorful as You Chew
My husband especially loves eating bread. To cater to his taste, bread has become our staple food at home. Recently, my husband's blood sugar has been a bit high, so he can't eat high-sugar and high-fat bread anymore. For the sake of his health, I looked everywhere for low-sugar and low-fat bread recipes. Finally, I found one that met my requirements on Junzhi's blog. I tried making it at home, and it turned out really well. This bread includes roasted walnut pieces, which make it incredibly fragrant and more flavorful with every bite. Based on Junzhi's recipe, I made a few slight adjustments. Haha, it turned out great. I didn’t add butter or eggs. Instead, I used olive oil, which made it even healthier!

Put bread flour, water, sugar, salt, and dry yeast together in a stand mixer and knead into a dough. Add olive oil once gluten starts to form and continue kneading.
Knead until you can pull out a membrane. This will take about 23 minutes.
Add the walnut pieces to the dough and knead in the stand mixer until evenly combined.
Cover the kneaded dough with plastic wrap and let it ferment in a warm and humid place for the first rise.
Let it rise until it doubles in size.
Punch out the air from the risen dough using your palm, divide the dough into 8 equal pieces, round them into balls, and let them rest covered with plastic wrap for 15 minutes.
Take one dough ball, flatten it with your palm, and then roll it out into an oval shape using a rolling pin.
Roll it up from the top to the bottom, while folding the edges towards the center as you roll.
Pinch the seam tightly to create an olive shape where the middle is thicker than the ends.
Place the shaped dough on a baking tray and let it rest for the final proof.
After proofing until double in size, use a sharp knife to make three diagonal cuts on the surface of each dough (about 0.5cm deep). I brushed egg wash on four pieces and left the other four unbrushed.
Bake in a preheated oven at 180℃ for about 20 minutes, until the surface is golden brown, then remove from the oven.
