[XO Sauce Slap Fried Noodles]

When I was little, my grandmother used to make Slap Dumplings for me, stuffed with shepherd's purse and pork. She might have also added some of her secret ingredients. Watching me gobble it down, she would say, half-jokingly, 'Even if I slap you, you won’t put down the bowl.' Since then, whenever I encounter foods that are so good I don’t want to put down the bowl, I give them the name 'Slap.' For instance, I once made Slap Fried Rice, and now I’ve created this upgraded 'XO Sauce Slap Fried Noodles.' Over the past two years, my studio team has grown slowly but steadily. However, we’ve maintained the small canteen-style lunch where we eat together, and occasionally, we cook together. People are different, and their tastes and ideas vary, but when it comes to delicious food, everything becomes simple and joyful. Even ordinary dishes taste better thanks to the lively atmosphere. Building on my method for Slap Fried Rice, I’ve made this fried noodle with a touch of XO sauce, and after tasting it, I had no choice but to document it in this episode of Diary of Food. Set aside the prawn heads. Boil the prawn meat in salted water until 70% cooked. Also, blanch the carrots and peas. Remove and set aside.

Cook the noodles, drain, and toss with a bit of cooking oil to prevent sticking.

Separate the salted egg yolk from the white, then mash them up.

Heat the pan and add cold oil. Fry the prawn heads to extract prawn oil. Once the oil turns golden, discard the prawn heads.

In the prawn oil, stir-fry the salted egg yolk thoroughly, then add the salted egg white, chopped onion, diced carrot, and peas. Continue stir-frying.

Add the noodles and prawn meat, mix in an appropriate amount of XO sauce, stir well, and serve.
