Brown Sugar Almond Cookies

In the midst of a busy life, take some time to bake lovely little cookies for yourself, sit in a clean and cozy room, drink coffee, and enjoy freshly baked cookies. That feeling is so tranquil and wonderful, incredibly pleasant! Brown sugar is ideal for women during their menstrual cycle and also great for daily consumption. Almonds and walnuts are also highly recommended for women to eat frequently. Therefore, calling it a favorite snack for women to chew on is not an exaggeration. The rough texture and chewy taste are exactly what I like.

Ingredients

Steps

Crush the brown sugar into fine powder using a rolling pin, mix it well with softened butter.

Beat with an electric mixer until the color lightens and the volume increases.

Add the egg liquid in three batches, beating until soft and evenly blended.

Sift in the low-gluten flour and mix roughly, then add almond slices and knead with your hands into dough. Be careful not to over-knead.

Shape into a rectangular block and freeze in the refrigerator for about half an hour.

Cut into slices of 0.8cm thickness. Preheat the oven to 180°C and bake in the middle rack for 25 minutes. Turn off the oven and let it sit with residual heat for 10 minutes.

Cooking Tips

1. You can use either almonds or walnuts depending on your preference. 2. Add a generous amount of nuts for better flavor. Initially, I added too many almonds and was concerned about cracking, so I used fewer walnuts later, but the flavor was noticeably lacking. 3. You can add a bit of baking powder to make the cookies fluffier. However, I usually skip it for a harder texture, which is healthier and more fragrant the more you chew. 4. When shaping into a rectangle, I first roll the dough into a cylindrical shape and then use two small cutting boards on either side to help shape it easily. If shaping is too troublesome, you can also pinch the dough into small balls and shape as desired—it’s quite fun too. 5. I made one type of almond cookie and one type of brown sugar almond (or walnut) cookie. My cookie-loving friend Xiao Ai and I both preferred the latter. However, the later batches of the brown sugar walnut cookies were baked a bit longer, making them harder, which ironically makes them perfect for chewing. Brown sugar is ideal for women during their menstrual cycle and also great for daily consumption, while almonds and walnuts are also highly beneficial for women. So, calling it a favorite snack for women to chew on is certainly fitting. The rough texture and chewy flavor are just what I love.
