Soulful Crown Millet Bread that Melts in Your Mouth

A soulful dish is one that you can enjoy no matter your mood, age, or location, whether you're dressed up to dine out or eating at home in your pajamas. It's something you can relish regularly—today, tomorrow, next month, or even five years later! I aspire to bring surprises to my family on ordinary days, and I also want to share my creative recipes with my lovely fans. I want to bring joy to your kitchen and delight to your taste buds. Today, I'm introducing my creative baking star: Crown Millet Bread! This bread has a lot of soul—soft yet slightly crispy, super flavorful, and will sweep you away with just one bite. It's healthy, simple to make, and even easier to succeed with than my sourdough bread! I hope this fun and aesthetic recipe brings you positive energy and a beautiful day. Thank you for sharing and supporting! Where did this idea come from? When I was very young, I once tried Moroccan bread whose soft, tender, and fragrant taste imprinted on my soul. After coming to China, I noticed how much people here love millet—something we seldom use in France yet seems to be a household staple in China. So, I wanted to create a new flavor using an ingredient you are all familiar with to dazzle your taste buds. This millet bread is low in oil and sugar, making it both healthy and nutritious! Using familiar ingredients and simplifying complicated fermentation steps to create food that can be enjoyed daily and brings joy is my mission and responsibility as a culinary KOL. The happiest and most fulfilling part of my day is seeing you all trying my recipes and hearing your stories about them. Some of you have even shared adorable photos of your children holding the bread—it truly melts my heart! My ingredients and tools introduction: I use Bob's Red Mill high-gluten flour (highly recommended) https://www.xiachufang.com/goods/93264/ The red tool I use is a semicircular scraper, which is handy for baking. I use a 38L oven with a standard baking tray and rack.

Millet (granules)8-10g

Prepare all the ingredients, let's get started!

Use a blender to crush millet into flour.

Mix the measured flour, millet flour, salt, sugar, and yeast.

Add warm water and olive oil to the mixture. Mix at low speed in the blender for 2 minutes, scrape the edges, and mix at high speed for 5 minutes until the dough is smooth. Add the millet granules. (If the dough feels too sticky, you can add a little more flour or lightly coat it with olive oil to make it non-sticky and knead it into a round shape.)

Cover with plastic wrap and let ferment at room temperature for 2 hours.

Roll into an 80cm long strip (approximately the width of four hands).

Sprinkle flour on baking paper and place the shaped bread on it. Sprinkle another layer of flour on the bread, cover it with plastic wrap, and let it ferment at room temperature for an hour.

Preheat the oven to 180°C and bake for 20-25 minutes until the bread is a lovely yellow with a hint of brown.

Cooking Tips

You can create various shapes; here, I made the classic crown shape. Storage options: Freeze in a plastic bag or wrap in a kitchen cloth for one to two days at room temperature. Do not throw away dry bread—it can be used in our recycled bread recipes!
