Ingredients
Lotus Root200g
Red Cabbage80g
Cold Boiled Water1 bowl
Honeyto taste
White Vinegarto taste

Wash and chop the red cabbage into small pieces. Place it in a blender, add a bowl of cold boiled water, blend and strain to extract the juice, then add a small spoon of white vinegar. It will instantly turn pink.

Wash the store-bought lotus root slices clean. (I bought pre-processed slices that don't need to be blanched. If you're using raw unpeeled lotus root, peel it, slice it, and blanch it in boiling water.)

Take a container and add honey.

Mix the honey thoroughly into the red cabbage juice.

Soak the lotus root slices in the mixture.

Cover with a lid and refrigerate. It's ready to serve in an hour.

Cooking Tips
1. The intensity of the pink color can be adjusted based on the amount of red cabbage and water used.
2. The soaking time in the refrigerator also affects the color of the lotus root. A longer soaking time allows the color to be better absorbed, making it more vibrant and beautiful.
