Stir-Fried Squid with Green Peppers

Peel the fresh squid, remove the innards, trim off the edges, make crosshatch cuts, and rinse clean.

Marinate with rice wine for 15 minutes.

Cut the green peppers in half, remove seeds, and slice thinly. Peel and thinly slice carrots as well.

Blanch the squid in boiling water to remove any fishy smell. Once the squid curls up, remove and drain.

Heat oil in a wok, stir-fry carrot and green pepper slices quickly until slightly tender.

Add the squid pieces and stir-fry briefly. Finally, season with salt, chicken bouillon, and use starch water to create a light sauce. Toss to combine flavors, then serve.
