Banana Peanut Butter French Toast

French toast is one of the classic snacks in Hong Kong's tea restaurants. It is said to have been introduced from France and is also known as [French Toast], but often abbreviated as [Toast] or [Western Toast]. What sets this version apart is the mashed banana filling, which perfectly complements the peanut butter. Simply irresistible!

Ingredients

Thick-cut toast2 slices
Peanut butterSuitable amount
Banana1 piece (about 170g)
Egg1 piece

Peel the banana, cut it into pieces, mash 2/3 into a puree, and cut the remaining 1/3 into small cubes.

Trim off the edges of the 2 slices of toast.

Spread a layer of peanut butter evenly on one slice of toast (you can apply more if you don't mind the calories). Spread banana puree on the other slice (I left some texture in the puree for better flavor). Press the two slices together gently.

Beat the egg and coat the toast in it.

Coat all six sides of the toast evenly with the egg mixture (rest each side for about 10 seconds to let the toast absorb the egg).

Melt the butter in a frying pan, then fry the toast on all six sides until golden brown.

Cut the toast into your preferred shape, top with the fried banana cubes (fry the banana bits slightly after the toast), and drizzle with some honey or maple syrup.

Cooking Tips

1. It's best to choose ripe bananas for better flavor; 2. If you don't have butter, you can substitute it with vegetable oil, though butter has a richer aroma; 3. If you don't like it too sweet, you can skip the honey/maple syrup, or sprinkle some shredded coconut instead—it tastes great too.
