Rabbit's Coffee Cookies (This recipe makes about 40 pieces)

Ingredients

High-gluten flour128g
Butter125g
Coffee powder5g
Powdered sugar216g
Corn starch60g (Corn starch)
Cocoa powder2g
Whole egg liquid40g
Vanilla extract1/2 tsp

Mix butter and powdered sugar, beat with an electric mixer until color lightens, turning white and fluffy like feathers.

Beat whole egg liquid and sugar until color lightens and volume expands.

But don't over-beat to the point it can be used for making cakes.

Add the egg mixture into the whipped butter in 3-4 batches, stirring evenly using a spreading motion with a spatula.

The final result should be very smooth.

Sift in the dry ingredients in batches, gently mix until no dry flour remains, but do not overmix.

Dissolve the coffee powder in a small spoon of hot water, pour into the dough, add vanilla extract and continue to mix into cookie batter.

Transfer the cookie batter to a piping bag, evenly pipe it onto a baking tray (I used a non-stick tray, use parchment paper otherwise). Space the cookies apart as they will expand slightly in the oven.

Bake at an actual oven temperature of about 170°C for approximately 20 minutes.

Immediately transfer to a cooling rack after baking to prevent moisture at the bottom from softening the cookies.
