[Xiao Gao Jie] Crispy Sesame Bread - Thin and Aromatic Sesame Flatbread
Sesame bread (crispy sesame bread) is an easy-to-make pastry. It doesn't require strong gluten, and kneading the dough is quite effortless. Plus, the ingredients are commonly stocked in households. Pair it with a pot of red bean porridge and a couple of side dishes. Enjoying it with sesame bread makes for a very comforting dinner.

Mix 250 grams of water with 4 grams of yeast and 12 grams of oil.
Add 400 grams of flour and 2 grams of salt, then stir.
Knead into a dough (either soft or firm dough works).
Let the dough rest for 20 minutes, then knead for 1 minute. Rest the dough for another 1.5 hours.
Make the oil paste: crush 3 grams of fennel seeds.
Heat 50 grams of oil in the pan. Before the oil gets hot, add the fennel seeds. Use low heat until the fennel seeds change color slightly, then remove from heat.
Pour the hot oil over a mixture of 60 grams of flour and 4 grams of salt. Stir well.
Divide the rested dough into 8 equal parts.
Take one portion of dough and roll it into a long shape.
Spread oil paste on the surface.
Roll up the dough.
Flatten the rolled dough.
Roll it into a long strip once more.
In a small bowl, mix 15 grams of water with 2 grams of flour.
Brush the water-flour mixture onto the surface of the rolled dough (to help the sesame stick).
Sprinkle sesame onto the dough and gently press with a rolling pin.
Preheat a stone baking board in the oven at its highest temperature.
Let the dough rise for 30 minutes.
Bake at the oven's highest temperature for 6-7 minutes.
Remove from oven.
The outer crust is crispy, and the aroma of fennel seeds fills the air.
