Carrot Okara Pancakes

I just made carrot soymilk—don’t throw away the pulp left in the strainer! We can turn “waste” into treasure and make delicious little patties! With a small amount of sugar, they’re mildly sweet, and my little daughter absolutely loves them. You can also use regular okara with carrot bits; with this ratio the patties come out with just the right firmness, nice and chewy, and when you bite into them you can still see the carrot pieces! You can shape them however you like, but round ones are definitely the quickest to make (≧▽≦)

Ingredients

Okara (soy pulp)120 g
Glutinous rice flour70 g
Cake flour (low-gluten flour)50 g
Diced carrot15 g
Caster sugar25 g

Steps

After filtering the soymilk, weigh out the okara when it’s just moist enough that it doesn’t drip. Weigh out the other ingredients as well, and finely dice the carrot.

Put all the ingredients (except the carrot) into a large bowl and mix well.

Knead into a dough, then add the diced carrot.

Mix until the carrot pieces are evenly distributed.

Divide into suitable portions, roll into balls, and place them in a greased non-stick pan.

Pan-fry the patties over low heat. After flipping, add a small amount of water, cover with a lid, and cook until the water evaporates and the patties are cooked through, then remove from the pan.

Cooking Tips

With this ratio the patties are pleasantly chewy when you bite into them. If you prefer them softer, add more glutinous rice flour; if you like them crisper, also use glutinous rice flour! They’re mildly sweet, and when you bite in you still get little carrot bits! *^_^*
