Coca-Cola Chicken Drumettes
Made mainly with chicken drumettes and Coca-Cola, this dish is delicious and brightly colored. The drumettes are tender, with a well-balanced sweet and savory flavor, retaining Coca-Cola’s distinctive aroma and making it a family favorite.

1. Rinse the chicken drumettes. Use a fork or toothpick to prick holes in them to help them absorb the seasoning. Add an appropriate amount of dark soy sauce, light soy sauce, cooking wine, salt, ginger, and scallions, and marinate for at least 2 hours.
2. Add water to a pot and bring to a boil, then add the marinated chicken drumettes to blanch. Add ginger, scallions, Sichuan peppercorns, and cooking wine to the water. After boiling for 5 minutes, remove the drumettes, rinse with warm water, and drain well for later use.
3. Heat an appropriate amount of vegetable oil (preferably neutral-flavored) in a pan. Add scallions and ginger, then add the well-drained drumettes. Pan-fry over low heat until the surface turns golden brown.
4. Pour one can of Coca-Cola into the pan, then add an appropriate amount of dark soy sauce, light soy sauce, and salt. Bring to a boil over high heat, then reduce to low heat and braise for about 30 minutes.
5. Braise until the drumettes are fully cooked through (you can pierce them easily with chopsticks), then turn the heat to high to reduce the sauce. When only about 3 small spoonfuls of sauce remain, turn off the heat and plate the dish.
