Makes five rectangular financiers

Ingredients

Butter50g
Egg whites50g
Caster sugar35g
Honey10g
Cake flour20g
Almond flour20g
Earl Grey tea (tea bags)4–6g (2–3 bags)

Steps

Prep work: 1. Sift the cake flour and almond flour separately, then mix well together and sift once or twice more. Finally add the tea leaves and mix evenly. 2. Prepare one bowl of cold water and one bowl of hot water and set aside. 3. Grease the molds with butter and dust with flour to prevent sticking. 4. Preheat the oven to 200℃.

Heat the butter over low to medium heat until it turns a tea-colored brown. Place the pan into the prepared cold water to stop the heat from continuing to cook the butter, then remove and set aside. Before mixing with the other ingredients, keep the butter at around 60℃.

Add the caster sugar and honey to the egg whites, set the bowl over the hot water, and gently stir until the sugar dissolves.

Add the mixed dry ingredients to the egg whites. Use a whisk to stir until no dry flour remains, but do not overmix. When you lift the whisk and the batter flows down smoothly, it is well mixed.

Strain the butter into the bowl, then mix with a whisk until combined. In winter, work quickly so the butter does not solidify again.
