Biscotti is usually served with coffee or dessert wine, but this version is enhanced with black tea. It’s crisp with a light, elegant tea aroma, and also pairs wonderfully with black tea~ Makes about 15 pieces

Grind the tea leaves into a fine powder and set aside [you can simply open tea bags and use the leaves inside].
Combine the vegetable oil, sugar, beaten egg, and vanilla extract, and mix until well blended.
Sift in the combined all-purpose flour, baking powder, and salt. Add the tea powder from step 1 and fold with a spatula until evenly mixed.
Transfer the dough onto a baking tray lined with parchment paper. Shape it by hand into a long strip about 6cm wide; it doesn’t need to be too thick. Bake in a preheated 180°C oven for about 25 minutes. Remove from the oven (do not turn the oven off) and let cool for 15 minutes.
Use a serrated knife to cut into strips about 1.2cm wide. Lay them cut side up back on the tray and bake for another 10 minutes, then flip and bake for an additional 10 minutes.
