Salted Egg Yolk Pastry with Tart Shells (Lazy Method)
Just craving salted egg yolk pastries and too lazy to go buy them
Ingredients
Steps
Separate the tart shells from their metal cups. Cut each salted duck egg yolk in half, sprinkle with a little white liquor, and bake in the oven at 160°C for 6–8 minutes.
Then add cake flour and knead into a smooth dough.
This is because one tart shell alone isn’t enough to wrap the filling, and using only tart shells makes it too greasy. Adding flour helps absorb some of the oil. Divide into 12 portions of dough, about 28g each.
Prepare the red bean paste, dividing it into 25g portions. You’ll need 12 portions in total.
Stuff the egg yolks into the bean paste and seal well.
Then wrap each filling ball with a portion of dough.
Brush with egg wash and sprinkle with sesame seeds.
Bake in the oven at 200°C for 25–30 minutes, until nicely golden.
