Prepare all ingredients. Let the scallion pancake sit at room temperature for a few minutes to defrost (do not remove the plastic sheets on both sides, otherwise, it will absorb moisture from the air and become sticky).
While the pancake is defrosting, weigh the filling to 18g each and form into small balls (apply some cooking oil on your hands to prevent sticking, making it easier to shape into balls).
Once the pancake softens slightly, remove the top plastic sheet and use the bottom one for support to roll the pancake into a log. Roll tightly to make it firm.
After rolling, sprinkle a bit of corn starch to prevent sticking.
Cut the roll into four equal portions of about 25g each (the middle two will be shorter since the ends are partially hollow).
Press the middle with your index finger.
Pinch both ends towards the center with two fingers.
After pinching, flatten the dough.
Roll it into a palm-sized pancake.
Stuff the red bean filling inside and seal tightly.
Form into a ball shape.
Turn it over with the sealed side down, flatten it gently, brush with egg yolk wash, and make three slits with a sharp knife, revealing some filling to prevent it from puffing up while baking. Optionally, sprinkle a little roasted sesame on top for extra flavor.
Bake in an air fryer at 160°C for 20 minutes or in an oven at 180°C for 25 minutes. Let it cool slightly before eating for a crispier texture. Store in small bags, and it will stay fresh for 2-3 days.
