Soft Fluffy Waffles (Yeast Version)
After three days of nonstop testing like a little lab mouse 🐁, I’ve concluded: yeast waffles can be not only healthier than baking powder ones, but also softer and fluffier 🤨😏

After preparing all the ingredients, first whisk together the beaten egg, caster sugar, and melted butter until well combined. Then gradually add the milk at room temperature while stirring.
Sift in the mixed dry ingredients in several additions. Stir until smooth, then add the salt and mix into a fine, lump-free batter.
Cover with plastic wrap and let ferment at room temperature for about 50 minutes (extend the time appropriately in winter). When tiny bubbles appear, the fermentation is done.
Preheat both sides of the waffle mold for 2–3 minutes.
Brush oil evenly over the inner surfaces, pour in about one-third of the batter (around 100g), and spread it out with a spoon.
When small bubbles appear on the surface of the batter, close the mold and cook for 1 minute. Flip and cook for another minute (use low heat the whole time). You can open the mold briefly to check the color as it cooks.
After 2–3 minutes, your soft, fluffy waffles are ready. Remember to cool them on a wire rack 🤓 Serve with jam, yogurt filling, whipped cream… Durian lovers can also try sandwiching in some durian spread 😋😋
